Summary
In Chapter 2, Mei describes three different kinds of axes.
A man named Neils visits Hels in search of work. Because it is "halfway through the season," Hels can only give him kitchen work (49). Neils says he wants to be head cook. Hels explains that Hao is head cook. Neils is angry, insisting that a Chinese man cannot cook. The men argue. Finally, Neils agrees to work under Hao. Hels tells him to report to Hao the next morning. Neils storms out.
Hels and Hao discuss the kitchen "Inventory and budget" (52). The men talk about their daughters. Hels compliments Mei's intellect. They talk about how much the girls like to read. Then Hels apologizes for what Neils said. Hao says he can handle Neils,, because he has overcome other difficult things.
