The moon is a symbol of light and power. The Earth Walkers worship the Moon Goddess, and name their high priestess and leader Moon Woman. It is associated with women, which reflects the matriarchal construct of the society. It represents constant cyclical change, which reflects the Night Fever that affects the Earth Walkers every three nights if they are not washed by a Moon Woman.

Sun

The sun is a symbol of power and light, too, but there is a long tradition of the sun being associated with masculine energy. The Companions worship the sun and have a Sun Priest and a patriarchal society. The sun is less fluid and subject to change than the moon. It is sturdy and solid and constant, just like the just and righteous Companions.
