German chemist who was one of the leading researchers and chemical educators of the nineteenth century. He improved analytical methods for organic compounds, but is best known for his pioneering researches in agricultural chemistry, nutrition, and other aspects of the chemistry of living things. His theory of chemical fermentation led to a controversy with Louis Pasteur (1822-1895) about the role of microorganisms in fermentation and putrefaction.
