how do properties of phospholipids produce a double layered structure?

The attraction between the hydrophobic tails in the center and between the hydrophilic heads and the surrounding water makes membranes very stable. Hydrophobic means they are not attracted to water (but are to each other), while hydrophilic means that they ARE attracted to water. This push-pull creates the double layered structure.
