Who is Toby from All Loves Excelling and what is their importance?

Toby helps Amanda unload her things when she arrives at St. Matthew's. Toby and Amanda go onto become friends, and over time, he begins to worry about Amanda and the fact she doesn't seem to enjoy running. Toby also suspects that Amanda has developing an eating disorder and tries to help her, but she won't let him.
