Who is Sharon from A Bite to Remember and what is their importance?

Sharon is Vincent's immortal secretary. She was hired by Vincent when she was widowed by one of his very close friends. She seems to be very protective over Vincent and has a strong personality. When she meets Jackie she persistantly tries to read her mind and the whole reason she goes to the house is just to meet her and scope her out.
