What did Herriot laugh about when he went to help Mr. Ripley and why?

After helping with Mr. Ripley's cow with the hobnail, Mr. Ripley asked him to castrate a full-grown bull. Herriot laughs about this because of all the many promises Mr. Ripley had made about not waiting until calves matured to be castrated.
