What do horses represent?

Horses represent class and situations. When Jean and others returned from the failed campaign in England, most had lost their war horses and a lot of money, and were reduced to riding farm horses upon their return. The farm horses were symbols of the working class and were far less expensive with different training from the war horses. War horses were very expensive and saved exclusively for battle.
