How did the Nearings decide to make maple syrup as their cash crop?

The Nearings decided to make maple syrup after noticing the cans of maple syrup in the barn. Up until that point, it had never occurred to them to make syrup. They hadn't even noticed the sap buildings dotting the landscape around their home.
