How does Joey know that Sofia is following Saul?

Joey has a man named Freddie following Sofia. Freddie calls him and tells him that Sofia is following Saul and they are at lunch in Chinatown. Joey tells Freddie to watch her until she gets in a cab. He is to make sure she gets home safe and she does not see him.
