What has Paul prepared for dinner when Serge and Babette visit while Claire is in the hospital? Why?

Paul has prepared macaroni alla carbonara. It is the only dish that Paul had ever mastered down to the smallest detail and aside from the spare-ribs from the local cafe, it is Michel's favorite meal.
