Who is Jeannie from The Cupcake Queen and what is their importance?

Jeannie is the college student Lizzie employs at The Cupcake Queen bakery. She is described as a natural blonde, who drives a Mini-Cooper. At the start of the novel, Jeannie calls in sick, which is the reason why Penny helps her mother set up for Charity's birthday party. Jeannie's character never reappears in the novel, and we infer that she has gone back to school.
