Why did the French hate salt taxes so much?

The salt tax or the Gabelle, was a tax on every Frenchman. One of the worst parts of the salt tax was the sel du devoir or a law that stated every person over eight must buy 15.4 pounds of salt a year, far more than anyone could reasonably use.
