In what areas dishes does the heavy use of salt still survive?

In Europe salt consumption has halved over the last hundred years. One place salted meats has survived is in Jewish Delis, especially in the popular salted salmon dish, lox. Another salted fish that remains is anchovies. Capers and Tuna have also survived, though tuna is not as salty as it once was.
