Who is Madame Gaillard from Perfume and what is their importance?

Madame Galliard raises Grenouille after Father Terrier places him into her care. She is a strict woman, but she is also fair. Having no sense of smell herself, Galliard never realizes that Grenouille has no scent. Galliard apprentices, or sells, Grenouille to the tanner when the church stops making payments for his care.
