In the poem, Originally, blindness symbolizes the void, the blankness the speaker senses as the result of losing her home. It also represents the "vacant rooms" back in the house in which the speaker will never live again. In a sense, the speaker's stuffed animal is a reflection of the speaker herself: empty, lost, in need of comfort.
