How does Harry prevent Susan from eating him?

Susan is almost unable to resist Harry's scent, and attempts to drink his blood. Harry knows that if she does, he will not be able to stop her from killing him, and it will complete her transformation. Harry attempts to reach her mentally, via a spell, and when he tells her that he loves her, all of his memories about their time together flood into her, and prevent her from eating him.
