Who is Sabine from Evermore: The Immortals and what is their importance?

Ever's paternal aunt, Sabine is Ever's father's twin. Sabine is not married and has a successful law practice. She tries to fill the role of parent in Ever's life but struggles, not knowing if she's doing the right things for Ever. As soon as she's to take on the role of Ever's guardian, she sells her condo and buys a large house. Ever's room is a teenager's dream, including flat screen televisions, wet bar, game room, and many other amenities. Despite providing for Ever in this way, Sabine worries that she leaves Ever on her own too often.
