Who is The Hitchhiker from Cannery Row and what is their importance?

The Hitchhiker is a scowling, taciturn man who looks like a salesman, the unnamed hitchiker rides with Doc from Santa Barbara to Ventura, where Doc ejects him for daring to comment on Doc's enjoying a beer at a rest stop. It is one of two instances in which Doc's temper is displayed.
