Why does Mr. Guppy so easily agree that his marriage proposal to Esther is now moot?

Esther shows him that her face has been changed by the scars left by smallpox. She is no longer the lovely girl she was before and he is no longer attracted to her. She lets him off the hook by confirming first that the proposal is no longer valid.
