Why does Jaime ask a tongueless headsman to accompany him to Riverrun?

In a Feast for Crows, Jaime asks the headsman to go with him to Riverrun because he finds the man to be a good listener. This would be so since he doesn't speak and has no tongue. In particular, Jaime wants him to spar with him in secret as he retrains himself to use his left hand for fighting.
