Act it out
Have students act out a scene from the story. You may break students into groups, assigning each group a section of the story. Consider filming it.

Have students write a poem about any scene from the book.

Create a word search puzzle using an online program with words from the book.
Fly the colors
Have students make a flag they would fly above their cities. Encourage the use of various materials, including fabric or construction paper. Remind students that the colors and the design should mean something.
