Proteins are polymers consisting of a set of 20 amino acids. They serve as one of the most important components of nearly all living creatures. Taking part in virtually every process in the human body, proteins account for 50% of the dry weight of most cells, and even their name, which comes from the word proteious, means "first place" in Greek (Campbell & Reece, 2002). Armstrong (2003) emphasizes the fact that the human body can create 12 of the 20 amino acids essential to the function of life. This leaves 8 amino acids that must be obtained through a diet with a large variety of protein rich foods.
